Easter Bunny... Forget the Reese's and Bring on The Top-8 Free Sunbutter Cups!
Listening to the radio this week, I heard a couple of morning hosts talking about a survey that got my attention. The question: What is the most beloved Easter candy in America? Peeps? Nope. Cadbury Eggs? Close second. The favorite... undeniably the Reese's Peanut Butter Egg. Of course.
With that said, it is unfathomable that my children not understand the beauty of America's favorite Easter candy! No, we may not be eating the peanut butter version, nor will we be consuming chocolate made with dairy milk. BUT, my kids will be enjoying the most amazing allergy-friendly version of the traditional Reese's treat! This right here is a dark chocolate Sunbutter cup that will knock your socks off... and could easily become a part of any of your favorite holiday traditions throughout the year.
Dark Chocolate Sunbutter Cups
2 bags of Enjoy Life Dark Chocolate morsels (approximately 4 cups)
1/2 cup of Sunbutter
3/4 cups of powdered sugar
2 tablespoons of dairy-free butter, softened (I use Earth Balance, soy-free version)
pinch of kosher salt
Begin by making the Sunbutter filling. Using a stand or hand mixer, mix Sunbutter, powdered sugar and dairy-free butter until mixed well and fluffy.
Prepare a *24-count mini-cupcake pan with cupcake liners. Using a double-boiler (or the microwave - just be careful to go slowly), melt both bags of chocolate chips, stirring chips with a spoon until very smooth. Take melted chocolate off of the stove and spoon chocolate into each cupcake liner until it's 1/3-1/2 full. Set remaining chocolate aside.
*You will have enough chocolate and filling to make at least 26-28 cups - it just depends on how full you fill each liner.
Put a dollop of the Sunbutter mixture into each liner, on top of the chocolate. Finish each cup by adding more chocolate to the top and making sure that the Sunbutter dollop is completely submersed and well-covered in the chocolate.
Use Easter sprinkles to decorate suncups and put them into the refrigerator for at least an hour to solidify. Continue to store cooled suncups in refrigerator until serving. once
