Start a New Back-to-School Tradition: Dairy, Egg and Nut-Free Chocolate Chip Cookies


As we approach the start of the new school year, a number of things fill our to-do list. Grabbing school supplies, buying new clothes, getting hair cuts... But, if you ask my kids about their favorite back-to-school tradition, I guarantee they'll say chocolate chip cookies. When my daughter Avery started preschool, I wanted to make the first day of school special when she came home, so I made her favorite cookies. The tradition stuck. Now, my kids come home every "first day of school" knowing that warm chocolate chip cookies - now dairy and egg-free - will be waiting for them!

I have tried several allergy-free chocolate chip cookie recipes, and I finally landed on one that my family loves. I found it on a phone application called Cook It Allergy Free, and it's perfect. In fact, I have a friend who swears that there is something magic about these cookies (and I always tell her that the "magic" is that it doesn't have any eggs in it). This is a perfect example of a baked good that does extremely well with egg replacer and my favorite dairy-free chocolate chips, and you can absolutely make it gluten-free!

Dairy and Egg-Free Chocolate Chip Cookies

3/4 cup dairy-free butter (1 ½ sticks) (I use Earth Balance brand)

1 cup brown sugar

1/4 cup sugar

2 Ener G egg replacer “eggs” (3 teaspoons of egg replacer powder whisked with 4 tablespoons of water)

2 teaspoons vanilla

2 ¼ cups all-purpose or gluten-free flour (I use King Arthur's Gluten-Free All-Purpose Baking Mix when I make these g-free)

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1 cup dairy-free chocolate chips (I use Enjoy Life brand)

Preheat oven to 350 degrees.

Mix together flour, baking powder, baking soda and salt, and set aside. In a separate bowl, use either stand or hand mixer to mix together butter and sugars until fluffy. Slowly blend in egg replacer until well combined, and add in vanilla.

Slowly add dry ingredients to wet until mixed thoroughly. Finally, fold in chocolate chips with wooden spoon.

Bake for 12-15 minutes or until cookies are golden brown.
